Корпус цесарки овальный, на голове рогообразный нарост белого цвета, клюв – розовый, массивная шея, хвост коротковатый, направлен в низ, лапы серые, иногда розовые. У самца голова крупнее. По оперению птицы встречаются серые, голубые, белые. Серые и голубые перья имеют белые пятна, а белые – покрываются блестящими вкраплениями. Маленькие птенцы цесарок окрашены в коричневатый пух, на животе он намного светлее, чем на других частях туловища, красные клювик и лапки. Взрослая особь весит от 1,7 до 3 кг. Одна самка за год может снести от 90 до 160 яиц. Птенцов можно пускать на тушку, начиная с возраста 90 дней, тогда их вес достигает 1,2 – 1,3 кг. Яйца самка откладывает желтого цвета в 45 г с достаточно толстой скорлупой. Благодаря этому, яйца могут долго храниться и не пострадают во время перевозки.
